The owner walks the Chuksan fish auction at dawn and picks the day's flounder himself. It is sliced fresh, never frozen or aged, and served in a chilled broth over spicy red-pepper sauce. He prepares only a day's worth, so the door closes when the fish runs out. There is also a set meal and a stew, so groups can order different things.
