In winter every wooden rack in Yongdae-ri is hung with rows of pollock drying in the wind. Freezing nights and thawing days turn them into golden, puffy hwangtae. Racks are built in December and drying starts properly in early January, so come after that. Hands-on programmes need a phone booking.
